Clinical Skill Builder for Food and Nutrition in Healthcare Institutions was prepared with grant support from the United States Department Agriculture, Cooperative State Research, Education, and Extension Service, and from Murray State University, Murray, Kentucky. I prepared this book to help instructors and students in nutrition, dietetics and food management programs in understanding the application of food, nutrition and dietetics principles in a hospital clinical setting.
